Breakfast Tacos

Ingredients

  • 3/4 cup shredded hash brown potatoes
  • 2 tsps Extra Virgin Olive Oil
  • 2 onions, chopped
  • 4 eggs, whisked
  • 4 corn tortillas
  • Salt and pepper
  • 1/4 cup salsa
  • 1 cup of side salad of choice

Directions

1. Heat a nonstick pan over medium heat.
2. Add potatoes and onions to oiled pan. Cook for 3-4 minutes until they begin to crisp.
3. Push the potatoes and onions to one side of the pan. Spray with cooking spray and add the eggs.
4. Scramble egg with the potatoes and onions.
5. Warm the corn tortillas. Serve with the eggs and a side salad of choice
