Fluffy Protein Pancakes

Ingredients

  • ⅓ rolled oats
  • 1 Whole egg (or 30g egg whites)
  • ½ mashed banana
  • ½ tsp bicarb soda
  • ½ tsp cinnamon
  • 1 scoop fav protein powder
  • ½ cup Milk of Choice

Directions

  1. Add all ingredients to a blender or food processor and blitz for 30sec to a minute until fluffy
  2. Preheat a pan on medium heat with cooking spray/small amount of butter
  3. Pour pancake mix and leave to cook, approximately 2 to 3  minutes or until bubbles form around the edges and flip. Cook for another 2 minutes
  4. Serve warm with your favourite toppings! 

Topping ideas:

  • Maple syrup or honey
  • Fruit: Banana/strawberries/blueberries
  • Greek yoghurt (can add cocoa powder/Matcha powder to flavour!)
  • Granola
  • Peanut butter
  • Homemade chocolate sauce (see overnight Weet-bix recipe)
