Spicy Satay Chicken & Grilled Veg

Ingredients

  • 1/4 cup chickpeas
  • 150g chicken breast
  • 3 cloves of garlic (or as much as your heart desires)
  • 1 tbsp. dark soy sauce
  • 1 medium zucchini
  • 1 medium sized chilli
  • 2 spring onions
  • 6 tsps. peanut butter
  • 1 bunch of coriander (leave out if you’re not a fan #teamcoriander )
  • 1/2 tsp. cumin
  • 1/2 tsp. ginger
  • 1 lime

Directions

  1. Chop up chicken into cubes and marinate in 2tsp soy sauce, garlic, half of fresh chilli, ginger, cumin. Let soak for 30 minutes or more and then skewer.
  2. In a pan, add chickpeas, zucchini, eggplant, spring onion and cook until golden brown. Add vegetables to serving bowl.
  3. Grill chicken skewers in pan until cooked through and golden brown. Add to bowl with veggies.
  4. In a small bowl add peanut butter, remaining soy sauce and finely chopped chilli. This is your satay sauce, add water to reach desired consistency of sauce.
  5. Garnish with fresh coriander and chilli and enjoy!
