Vegetable Fritters

Ingredients

  • 2 shredded carrots
  • 3 spring onions chopped
  • 1/3 cup of frozen peas + corn
  • 1 shredded white onion
  • 2 eggs
  • 3/4 cup of corn starch (Add to your desired consistency however the mixture should still be runny as the corn starch thickens whilst cooking)
  • 2 TBSPs of Cumin
  • 1 TBSP of Paprika
  • Salt and pepper to taste

Directions

  1. Shred all whole food ingredients and add to a mixing bowl.
  2. Crack open eggs into a separate bowl, whisk to combine and add desired spices.
  3. Add eggs to mixture (include an extra egg is necessary) and stir.
  4. Once combined add corn starch and mix until combined. On a medium heat, add Extra Virgin Olive Oil to desired pan and make sure the pan is heated before adding in mixture.
  5. Spoon mixture into pan of desired size, you may use egg rings for more symmetrical shapes.
  6. Cook each side for around 3-4 minutes or until browned on both sides.
  7. Make sure mixture is also cooked in the middle, you may require a longer cooking time depending on thickness and chosen heat.
